braveEATS: No Bake Energy Balls!

Hey BBP fam!  We’re in full- on half marathon training and with long runs and busy schedules, we’ve been tight on meal prep time!  Enter our favorite snack to keep us satisfied before, during or after our run: No Bake Energy Balls!  These babies take virtually no time to make, you can prep a bunch for the week in just about 10 minutes and have a healthy option to grab and go with you!

Here’s the recipe:

  • 1/2 cup rolled oats
  • 1/2 tablespoon chia seeds
  • 2 tablespoons water
  • 1/3 cup peanut butter
  • 1 date
  • 1/2 c peanut butter protein powder (right now we’re using Quest protein)
  • 1/4 c dark chocolate chips

Let the chia seeds sit in 2 tablespoons of water for about 10 minutes.  Combine the peanut butter, dates, protein powder oats in a food processor.  Add the chia seeds in and combine again.  Scoop into a bowl and add the dark chocolate chips.  Hand roll mixture into 6 balls.  Let sit in the refrigerator for about a 1/2 hour.  Wala!  Grab and go.  The perfect healthy snack to power you through your workout!
